Advanced Processing Technology for Aquatic By-productsTo enhance the utilization rate of whole fish, a deep processing procedure and high-temperature, high-pressure powdering equipment have been developed for by-products such as fish heads and bones generated during aquatic product processing. Using purely physical treatment, hydrolyzed solubilization, and high-temperature, high-pressure extraction technologies, the value of these by-products is significantly increased. The resulting products can be applied in food additives, health supplements, and biotechnology development, effectively promoting a circular economy and sustainable industrial development.

The calcium-to-phosphorus ratio is approximately 2:1, which best supports human bone structure. In accordance with the Ministry of Health and Welfare’s evaluation method for the bone health efficacy of functional foods, a 12-week animal study was conducted using ovariectomized mice. The results showed that fish bone powder effectively increases osteocalcin levels and reduces cholesterol and triglycerides. Compared to other natural or synthetic calcium sources, it demonstrated significantly better bone health benefits. Through the concept of circular reuse, this approach not only enhances the added value of aquatic processing by-products but also promotes overall industry sustainability.
